KCS Global Food Class

In Keene Central School the class sizes and community may be small, but teachers incorporate diversity in many ways. For four years, Mrs. Eldred has taught a global foods class. This year five students spend time learning about different countries and the most popular food.
Each month the students study a different country and cook their staple foods. From the beginning of the school year, this class has studied multiple different countries/areas: Ireland, Carribean, Cajun, and New England. While studying Irish food they made: shepard's pie with lamb, barmbach, lemon scones, cream potatoes, and a traditional breakfast with corned beef hash, eggs and blood sausage. They also made corn chowder, and boston creme pie while learning about New England cuisine. Lastly, they made chicken gumbo to learn about Cajun meals.
During November, the class helped the cafeteria staff make the Thanksgiving dinner at Keene. In 2017, KCS held their 47th annual thanksgiving dinner for students, staff, and community members. The students made squash, mashed potatoes, and carved the turkey. In addition, the class also contributed to the annual Out of the Darkness walk in Lake Placid this year. The class baked “depressed cakes” for the cake shop at the walk. The depressed cakes are gray on the outside but colorful on the inside to symbolize hope. One student in the class says his favorite part of the class is, “Definitely cooking”. Another senior says his favorite part is “cooking different foods from other parts of the world. I am used to just eating pizza and mac n’ cheese.” Mrs. Eldred enjoys preparing the kids for cooking when they are older.
